Nootkatone
Nootkatone is a natural sesquiterpene ketone and is an important ingredient in grapefruits. The odour and flavour are very typical of Grapefruit peel oil.
Nootkatone, with its woody and bitter character, is one of the main chemical components used in grapefruit flavours, but is also used in other citrus and tropical flavour and fragrance compositions. In its solid form it is usually found as colourless crystals. As a liquid, it is slightly viscous and yellow-orange coloured. Nootkatone is typically extracted from grapefruit or manufactured by chemical or biochemical oxidation of Valencene.
Nootkatone is used as a Flavour and Fragrance ingredient. The majority of the applications are found in flavours for the beverage industry.
